A naturalist’s playground surrounded by the lush jungles of Northern Thailand, Anantara Golden Triangle Elephant Camp & Resort proudly presents ‘Canopy, A Tree Top Dining Experience’, an innovative dining concept that reflects the resort’s eco-conscious ethos and commitment to promoting authentic regional flavours.

Perched 52 metres above the grasslands, Canopy is an open-air capsule that offers guests 360-degree views of the Golden Triangle. The design is reminiscent of local beehives and uses natural materials and muted, earthy tones to create a tranquil oasis where the only interruption is the symphony of the forest and where the gaze can rest on nature’s serene tapestry.

With the first light of dawn, epicurean travelers can use binoculars to observe life below, including the majestic elephants from the nearby camp. Lunch breaks invite a culinary exploration of regional flavors, as the jungle thrives in full daylight. Dusk transforms the capsule into an enchanting place for a sundowner, bathed in the soft light of the setting sun.

Served in traditional nature-inspired pinto containers, Canopy’s all-day tasting menus blend savory and sweet flavors with finesse. The Mekong Discovery menu pays homage to the region’s culinary heritage and includes dishes such as Lao river seaweed paired with spicy yellowfin tuna larb and Chiang Rai’s own curried pork on roasted rice toast. A fusion of Eastern tradition and Western innovation, Culinary Adventure presents dishes such as tender Wagyu ribs on artisan buns, Phuket lobster wrap with local avocados, baked Royal Projects figs in crème brûlée and local strawberries with mint in choux pastry. Finally, the Gourmet Odyssey menu enhances local cuisine with luxurious ingredients such as Wagyu M5 beef, scallops and Royal Projects caviar, with desserts ranging from kaffir lime financier to rose and pumpkin mousse and burnt coconut crème brûlée.

Executive Chef Pisit ‘Jino’ Jinopong explains: “At the heart of the Anantara Golden Triangle experience is a deep connection with the environment, whether through daily interactions with our rescued elephants, jungle trekking or dining. Canopy is a testament to our concern for ecological awareness and offers guests a space to engage with nature in an intimate and enriching way.”

With tasting menu prices starting from THB 14,000 per couple, Canopy welcomes guests from 7am to 11.30am for breakfast, 12.30pm to 4.30pm for lunch and 5.30pm to 7pm for sundowners.
