What is your favorite summer ingredient and will you incorporate it into your event offering?

Radish.

How did you get into this profession?

I loved creativity and making people happy.

What is the story behind your dish/drink that makes it perfect for a white party?

I learned to make this dish from Jody Adams over 10 years ago. It’s also a white gazpacho, so it’s perfect for a white party.

Can you describe any unique or standout elements your company will showcase at the event?

Emulsifying and marinating the vegetables requires time and patience.

Where do you get your inspiration from?

The simplicity of letting food be food without complicating the ingredients

What are you most looking forward to at the event?

To meet new people.

If your favourite cocktail or dish was named after a famous East End location, which would it be and why?

The trench plains.

If your company was a signature cocktail or signature dish, what would it be called and what would the drink/dish be?

I learned this dish from Jody Adams over 10 years ago. It also contains a white gazpacho, so it’s a good choice for a party with white guests.

What will you serve at the event?

Grilled swordfish with white gazpacho, corn and pepper salad.
