Enjoy this Harry Potter Butterbeer Ice Cream

Harry Potter still has a huge fan base… so why not have a bowl of Butterbeer ice cream to celebrate?

The Harry Potter series may still be a few years away, but interest in the Potter universe is still strong. The series continues to delight readers of all ages. In fact, new merchandise is doing well, including Legos, Squishmellows, and the books. It’s such a phenomenon that it’s crept into many different corners of culture, so why not treat yourself this summer and enjoy this Harry Potter Butterbeer Ice Cream? Make for a little magical midweek fun.

The author of the series, JK Rowling, was quoted in Bon appetit‘s saying: “I invented it. I think of it as a bit like less sweet butterscotch.” So why not try making some yourself? Butterscotch came about in the mid-19th century and the main ingredients are brown sugar and butter. Although it’s not as popular as chocolate or vanilla, it’s still a popular sweet, especially hard candy.

Ingredients

  • 2 Cups Whipped cream
  • 14 Ounces sweetened condensed milk
  • 1/3 cup Butterscotch syrup (see below)
  • 2 tablespoon Butterscotch syrup

Create

  1. In a food processor or with an electric mixer, whip the cream until stiff peaks form

  2. Stir in the sweetened condensed milk until the mixture is thick and fluffy

  3. Add about 1/3 cup butterscotch syrup and stir until well combined.

  4. Pour the ice cream into a loaf pan lined with baking paper

  5. Drizzle 1-2 tablespoons of butterscotch syrup over it and stir with a toothpick

  6. Freeze the ice cream for at least 6 hours or overnight until solid

  7. When serving, drizzle some butterscotch syrup over the top if desired

Butterscotch Syrup Recipe

Ingredients

  • 4 tablespoon butter (unsalted)
  • 1 cup brown sugar
  • 3/4 cup Whipped cream
  • 1 tablespoon Vanilla extract
  • 1 teaspoon Sea salt

Create

  • Measure all ingredients for butterscotch and prepare

  • In a medium saucepan, melt butter over medium heat

  • Add brown sugar and stir until butter is moistened.

  • Stir occasionally until the mixture looks melted, about 3-5 minutes

  • Reduce the heat, add the cream and stir.

  • Increase heat to medium and cook until it reaches 225°F on a candy thermometer, about 2-3 minutes, stirring occasionally.

  • Turn off the heat and let the syrup rest for a few minutes

  • Pour into a heatproof container and add vanilla and salt

  • Allow the syrup to cool to room temperature (between 1 and 3 hours).

  • Store in an airtight glass container in the refrigerator for up to one month

  • To use, microwave on low power for 10 seconds

Yuengling’s Ice Cream’s website offers a butterbeer flavor, which is half buttercream ice cream and half butterscotch ice cream, and is decorated with a butterscotch swirl.
